Apple pie

 

Dough
130 g ground almonds
55 g of coconut flour
60 g of tapioca
50 g of coconut sugar
100 g of coconut cream
30 g of ground chia seeds mixed with 60 ml of water
Mix the ground chia seeds with water and let them swell for 10 minutes. Then mix the wet ingredients and add the dry ingredients and mix everything well in a blender or with a hand mixer, take the mixture out of the blender and divide it into two parts and roll each part into a crust on baking paper. Prepare the apple filling.

Apple filling
4 grated apples
1 tablespoon of lemon juice
200 g of fresh soaked dates
1 tablespoon of Ceylon cinnamon
1 tablespoon of ground walnuts

First grate the apples in a bowl, mix them with a little lemon juice and cinnamon and leave them for 10 minutes. Blend the dates in a blender and add them to the apple mixture. Spread the resulting mixture on one crust and carefully cover with the second crust. Bake at 170 °C for 35-45 minutes until the cake is lightly browned. Take it out and be sure to leave it for an hour or two to cool.

 

 

 

Thick hot chocolate


Ingredients
220 ml of homemade almond milk
3 large spoons of raw cocoa powder
a spoonful of coconut cream
3 large spoons of coconut sugar


2 teaspoons of tapioca powder
3-4 tablespoons of water
1 teaspoon of Ceylon cinnamon
1 teaspoon of grated zest of an unsqueezed orange
Procedure
Place almond milk, cream and coconut sugar in a saucepan. Separately, mix 2 teaspoons of tapioca powder with 3-4 teaspoons of cold water. When the milk boils, reduce the heat to low and add cocoa powder and Ceylon cinnamon. Mix well, then add the mixture of tapioca and water and continue to cook gently for 1 minute, stirring constantly, until the chocolate thickens. If desired, serve with the grated zest of a non-sprinkling orange.

For people who are not allowed to consume nuts, this thick fine chocolate can be prepared in the same way with coconut milk.

Rafaello balls

Rafaello balls
Ingredients for 40 balls
180 g ground almonds
185 g of coconut flakes
80 g of Dr. Goerg coconut cream
2 tablespoons of melted coconut oil
180 ml of honey
Procedure
Mix the ground almonds and coconut flakes in a bowl, then add the other ingredients and mix everything well. Adjust the sweet to your taste. Place the resulting mixture in the freezer for a short time to firm up. When the mixture has compressed, form balls and roll them further in coconut. Store in the refrigerator.

Muffins with cherries


Ingredients
60 g of coconut flour
60 g of ground chia seeds mixed with 120 ml of water
1 teaspoon of baking soda mixed with lemon juice
100 g of melted homemade chocolate
100 g of coconut sugar
30 g of cocoa powder
50 ml of melted coconut oil
50 g of coconut cream
1-2 tablespoons
tapioca as needed
Mix especially dry and especially wet ingredients. Then combine all the ingredients together and let the mixture rest for half an hour. Take silicone molds for muffins, apply an equal amount of the mixture to each part and bake in a preheated oven at 175 C for about 25 minutes. Take out the baked muffins and leave them both to cool down for an hour and a half.
Shaking stuffing
300 g shake
2 tablespoons of lemon juice
2-3 spoons of honey
1 tablespoon of tapioca mixed with a little cold water
Remove the pits from the cherries and cook them together with lemon juice and honey, stirring gently. When it boils, reduce the heat, add the tapioca mixture and cook gently for about a minute or two until it thickens. Leave to cool. Cut off the upper part of the cooled muffins gently with a knife, put a spoonful of filling in each one and cover with the cut part. Decorate the top with coconut cream.
Whipped cream
1 cup of solid coconut oil
1/3 cup of coconut flour
3/4 cup of honey
Mix all the ingredients in a bowl. Put the mixture in the freezer for a short time to firm up, then decorate the muffins with it.
